Black Tuesday (2021)
In a skyline filled with towering barrel-aged stouts, the elegant simplicity of Black Tuesday continues to shine the brightest. This imperial stout was aged in choice bourbon barrels for over a year, developing complexity and flavors like nothing you’ve tasted before. Roaring notes of crème brûlée and poached fig are interlaced with hints of malted milk balls and Australian licorice, sparking a decadent, sophisticated fusion fit to claim its own day of the week.
Chocolate Rain (2021)
The reign of Black Tuesday was destined to grow with the creation of Chocolate Rain. This decidedly decadent version of our bourbon barrel-aged imperial stout was treated with TCHO cacao nibs and juicy, fresh vanilla beans. Rich in chocolate and vanilla, with hints of oak, it truly puts the “imperial” in imperial stout.
Freckles (2021)
Inspired by our Southern California heritage and love for Mexican cuisine, Freckles is a bourbon barrel-aged imperial stout treated to mirror the complex and layered flavors found in Molé. This complex imperial stout features decadent cacao nibs, rich vanilla, and just a touch of heat from cayenne and cinnamon. Salud!
Grey Monday (2021)
Inspiration can come from unexpected places. Initially created for a gastronomy dinner in 2012, Grey Monday was an appreciative complement to our hosts' epicurean craft. An ease to the Monday blues, this decadent treatment of Black Tuesday features Oregon-grown hazelnuts. Toasty and nutty characters play off bold yet smooth complexity in this bourbon barrel-aged imperial stout. Pair with inspiration to evolve your craft this week!
Imperial Cabinet (Gin Barrel-Aged 2019)
This gin barrel-aged American Wild ale is a collaboration with our friends at Jester King, in honor of the Imperial Cabinet, an 1880s New Orleans saloon. We brewed this American Wild Ale with traditional botanicals to lend herbal and floral notes and aged it with bright citrus. The result has notes of lemon and lime zest, orange blossom honey, vanilla, oak and spices.
Ivoire (2022)
Le quatorzième anniversaire of The Bruery brings another celebratory ale true to tradition. The masterful solera blending method combined with bourbon barrel-aging builds layers of complexity with a portion of each year’s anniversary ale represented in this blend. Notes of toffee and vanilla are perfectly balanced with dark fruit and oak characteristics in this celebratory blend.
NWTM (2021)
Call it a long weekend, put on your sunglasses, and take a sip. We took our bourbon barrel-aged imperial stout, Aloha Friday, double barrel-aged it for added complexity and richness, and added even more tropical flavor with fresh pineapple, as well as perfectly-toasted coconut and macadamia nuts. Full-bodied and warm, this island-paradise-in-a-bottle is smooth, nutty, and just the right amount of sweet. After all, it’s Aloha Friday— there’s no work till Monday. Ke aloha!
Partridge in a Pear Tree (Bourbon Barrel-Aged 2021)
Tradition and innovation; consider this a blend of the two. Inspired by the rich and welcoming flavors of a certain pear dessert, this quadruple ale sings traditionally familiar notes of dark sugar, caramel, and spice. We reserved some of last year’s ale and, in traditional Bruery style, aged it in bourbon barrels to gain complexity. This well balanced, seasonably spiced ale is meant to be shared on special occasions with family and friends.
The Walnutter (2022)
There are few flavors as mouth-wateringly delicious as a classic salty-sweet duo. Inspired by a fresh, homemade salted caramel walnut bar, we started by aging this imperial porter for 24 months in Rye barrels. We then treated it with dulce de leche, walnuts, vanilla, and salt to achieve all our salty-sweet dreams. Crack it open and share with your nuttiest friends.
Tart of Darkness (Rum Barrel-Aged 2018)
Brewed to resemble a stout at its foundation, Tart of Darkness's journey into tartness begins with fermentation in large oak puncheons at The Bruery - Terreux, where it’s treated to a special blend of souring bacteria and wild yeast cultures. Following a slow but wildly active fermentation, the beer is transferred for extended aging into used oak barrels including emptied bourbon barrels from The Bruery that previously held Black Tuesday. For this special edition, we aged the beer for another year in rum barrels sourced from Martinique.
Thomas Rutherford (2019)
Resting within this burgundy glass is an elegantly enjoyable version of The Bruery’s staple imperial stout. Thomas Rutherford was crafted through careful fermentation of Black Tuesday and Cabernet Sauvignon and Franc grapes from Napa Valley before developing in French and American oak puncheons. This still-packaged stout serves balanced characters of rich cocoa, berries, and currants for a velvety complement to a sumptuous evening.
White Chocolate Strawberry (2022)
Like a white chocolate-dipped strawberry, but better; White Chocolate Strawberry combines our bourbon barrel-aged wheat wine-style ale, treated with cacao nibs and hand-processed vanilla beans, with delicious strawberries, effortlessly blending flavors together for bright flavor and added complexity. The result is a big-bodied ale with notes of caramel and vanilla, rounded out with a touch of fruit sweetness.
